Red Pepper Baked Chicken



 

This boneless skinless chicken breast is breaded in seasoned bread crumbs with olive oil, seasoned to taste and baked in a 350 degree oven for 40 minutes with baby red potatoes brushed with olive oil and garlic. We made a homemade red pepper sauce, containing roasted red peppers, red onions, olive oil and and a small amount of margarine, seasoned to taste as a condiment. Put roasted pepper and red onion and other ingredients into a blender and serve hot over chicken and potatoes.
